Lemon Squares
A wonderful square recipe with the flavour of lemon.
Ingredients
Base
- 2 cup all-purpose flour
- 3/4 cup icing sugar
- 1 cup hard margarine (soft)
Topping
- 4 eggs
- 80mL lemon juice
- 1 1/2 cup cup white sugar
- 1/4 cup all-purpose flour
- 1 teaspoon baking soda
- 1 tablespoon grated lemon peel
- icing sugar, as needed
Procedure
Base
- Combine flour and sugar in a medium mixing bowl.
- Cut in margarine until mixture resembles fine crumbs.
- Press firmly into a greased and lined square pan.
- Bake base at 190 degrees Celsius for about 20 - 30 minutes, until lightly browned.
Topping
- Beat eggs in large mixing bowl, until frothy. Add the lemon juice and rind. Stir.
- In another bowl, stir together the sugar, flour and baking powder.
- Add dry mixture to wet mixture. Stir until just moistened.
- Spread evenly over base, and return to over for 20 to 25 minutes, or until set or slightly brown.
- Let square cool before removing from pan and cutting. Dust with icing sugar.
